Menu is coming together

After much study and I know a lot more to go I now have a basic menu minus desserts. If anyone knows of any traditional Native American desserts let me know so that I can look into them. I have the basic kitchen set up in mind and have many drawings of it on paper. I now know how the front of the house will look. I need to find a local wood carver for some table bases. Most important a local person that sells and makes his own Jerky. I am looking for all kinds of meat. I will keep updating as time rolls on.

Glad to see you found your way to Worth a Thousand Words. I know so little about anything food. My wife has a culinary degree and worked as a pastry chef for a while, I'll ask her. Also, not too local, but just north of Quartzsite, there is an Indian dude that sells every kind of jerky imaginable. It's on the road that you would get off the 10 to go to Havasu. He's got his own building and everything. Now it's been a good 3-5 years since I've been up that way, but it's Quartzsite, nothing ever changes in Quartzsite.
